Pudding. Is. Awesome.

Three years of raising children and only recently have I discovered the magnificence of pudding. Having a child who is allergic to milk has made my experience with pudding a small and quite unsuccessful one. Have you ever tried to make instant pudding with soy milk? Yeah. Doesn't work. Not even a little. You might as well just drink chocolate milk because that's the consistency. So, not too long ago I tried homemade pudding with soy-milk and it was a success. Who knew? So then I moved on to trying Jello brand Cook and Serve pudding. No milk in the ingredients with this lovely name brand. I added a little cornstarch and it was thick as could be. So I got adventurous this past week and tried the Jello Cook and Serve pudding mix without the aid of cornstarch to thicken it. And guess what? It worked! Like a charm! So to all those milk allergic people out there, if you want pudding, you can have it! It tastes awesome and the kids are in love. The great thing about pudding is that it uses their milk which has calcium in it. And I have searched high and low for ways to get more calcium into my kids. Our only sure way of getting calcium into the kids is with their soy-milk. Now they can have their calcium and eat it too! I can make frozen pudding pops, pudding cake, and all sorts of fun things now. The kids are in love and so am I. I love the fact that my menu just got one tasty option bigger. So in conclusion, pudding is awesome. Seriously awesome.
